I try to make it a little healthier by choosing a whole wheat or whole grain flatbread option. The variations of this dish are endless. If you are not into chicken and spinach, make it with sautéed onions, peppers, spinach and mushrooms. Or swap out the chicken for tofu.

How to Make Easy Chicken and Spinach Flatbread Pizza Recipe

Forget about greasy takeout and lengthy prep time – flatbread pizza is your ticket to pizza night bliss, minus the commitment. This recipe transforms store-bought naan into crispy canvases for a flavor explosion of melty cheese, fresh spinach, and succulent chicken.

Ready in under 20 minutes, this dish is perfect for busy weeknights or a fun and interactive family dinner. Plus, it’s incredibly versatile! Swap the chicken for leftover roasted veggies, add a drizzle of pesto for a burst of basil, or get creative with your favorite toppings.

Ingredients for Chicken and Spinach Flatbread Pizza Recipe

  • 4 flatbreads (naan recommended)
  • 1 tablespoon extra virgin olive oil
  • 1 package fresh spinach
  • 4-5 garlic cloves, chopped
  • 1 onion, chopped
  • 4 cooked chicken breasts, chopped (or use leftover shredded chicken)
  • 8 ounces shredded mozzarella cheese
  • Salt and pepper to taste
  • Optional garnishes: parsley, bacon bits, prosciutto

Directions

  • Preheat your oven to 400°F (200°C) and grease a baking sheet.
  • Heat the olive oil in a pan and saute the onion until softened. Add the garlic and cook for another 30 seconds.
  • Stir in the spinach and cook until wilted, adding extra olive oil if the pan gets dry. Season with salt and pepper. Set aside.
  • If using, chop your chicken breasts or shred leftover chicken.

Shrimp Scampi Flatbread Pizza

Using leftovers from your favorite shrimp scampi recipe or mine, Baked Shrimp Scampi, prepare the flatbread as directed above.

Dice your shrimp scampi leftovers. Then top each flatbread with shrimp scampi, shredded mozzarella and shaved parmesan cheese.

Bake about 5 minutes, checking on it about halfway through to ensure cheese is not burning. Remove from oven when cheese is melted. Garnish with fresh chopped parsley. Enjoy!

Meatball or Sausage Flatbread Pizza

Using leftovers from your meatball or sausage dish, prepare the flatbread as directed above. Reheat the meatballs and sausage for about a minute in the microwave. Rough chop meatballs and sausages.

Follow flatbread preparation above. Add layer of sauce on flatbread, top with meatball, sausage or both then top with shredded mozzarella and parmesan cheese.

Bake about 5 minutes, checking on it about halfway through to ensure cheese is not burning. Remove from oven when cheese is melted. Garnish with fresh chopped parsley. Enjoy!

Caramelized Pear Flatbread Recipe

This caramelized pear flatbread pizza recipe is so tasty and simple to make. It’s good enough to serve as an appetizer or brunch side if you cut it into slices. Or it can be served as a main dish.

Grab your favorite flatbread and set it on a non-stick pan while you pre-heat the oven to 400. Slice up one pear and onion, then saute both in extra-virgin olive oil and balsamic vinegar, then set aside. Bake the flatbread for 5 minutes to crisp it up in the oven before topping it.

After the pear mixture cooks down and gets soft, top the flatbread with it. Then top it off with half of the fresh arugula or spinach from the garden. Add some fresh mozzarella balls. If you want to add a nutty texture, top it off with some walnuts. Then pop it in the oven for 10 minutes.

Remove from the oven and drizzle a balsamic glaze. Season with salt and pepper. Allow to cool, then slice up and enjoy!

Roasted Veggie Pesto Flatbread Pizza

Preheat oven to 400 degrees. Dice veggies of your choosing (onions, peppers, mushrooms, etc) then toss with pesto. I love to use my homemade pesto recipe for this version.

Roast in oven for about 25 minutes. Give them a shjush halfway through so they cook evenly. Remove from oven.

Follow flatbread preparation above. Top each with roasted veggie mixture and shredded mozzarella. Bake about 5 minutes, checking on it about halfway through to insure cheese is not burning. Remove from oven when cheese is melted. Garnish with fresh chopped parsley – enjoy!
