Italian Sausage and Peppers Recipe Done Right: The Only Recipe You’ll Ever Need
Get the perfect Italian Sausage and Peppers recipe every time with this foolproof recipe. Minimal mess, maximum flavor—it’s the only one you’ll ever need.
Making sausage and peppers for my family is one of my favorite things to do. Growing up with a family from Italy, delicious home-cooked meals were a daily tradition, and this dish always reminds me of those times. It’s a great go-to recipe when you’re busy and want something simple to make.
I used to make this sausage, pepper, and onion recipe all the time when hosting family birthday parties because it’s so easy to make, packs a lot of flavors, minimizes the mess, and is a total crowd-pleaser.
But let’s be honest, making sausage can be messy! The juices seem to get everywhere, creating a greasy splatter that’s a chore to clean up. We pierce the sweet Italian sausage links, but they still manage to squirt juices everywhere. Whether you cook it on the stovetop or bake it in the oven, that cleanup is never fun.
This recipe for sausage and peppers eliminates that mess and is so simple to make, especially because I love to grill it! When you grill it, the dish gets a nice smoky flavor and keeps the mess outdoors. The best part is how easy it is to change the ingredients. If you’re not a fan of sweet Italian sausage, swap it out for ground chicken or turkey sausage.
I’ve made it several different ways with different ingredients, but prefer sweet Italian sausage. But if you want to give this recipe a little kick, go with the spicy Italian sausage. It is so yummy that way, too! Whenever I make this dish, I use an array of bell peppers depending on the season to get more color in the dish. Wait until you see how I make it!

Ingredients for Sweet Italian Sausage and Peppers Recipe
- 2 lbs. sweet Italian sausage links (about 8 links)
- 6 bell peppers, cored and sliced into strips (a mix of colors like red, yellow, and green is great for visual appeal)
- 2-3 sweet onions, halved and sliced
- 1 tbsp. extra virgin olive oil
- 5 cloves of garlic, minced
- Salt and pepper to taste
- 6 hoagie rolls, for serving (optional)

Directions to Make Italian Sausage and Peppers Recipe
- Prep Your Grill and Oven: Preheat your outdoor grill to medium heat and your indoor oven to 400°F.
- Grill the Sausage: Pierce each sausage link a few times with a fork to prevent them from bursting. Place the sausages on the grill and cook for 4-6 minutes per side until they’re nicely browned and have a smoky flavor. Once browned, set them aside.
- Sauté the Veggies: While the sausages are grilling, heat the olive oil in a large oven-safe skillet or roasting pan over medium-high heat on your stovetop. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Cook the Peppers and Onions: Add the sliced peppers and onions to the pan. Sauté them, stirring occasionally, until they have softened and are cooked down. Season with salt and pepper.
- Combine and Finish in the Oven: Cut the grilled sausages into quarters and add them to the pan with the peppers and onions, stirring to combine. Place the entire pan in the preheated oven and bake for 15 minutes. This final step brings all the delicious flavors together.
- Serve: For a classic sandwich, pile the sausage and pepper mixture onto hoagie rolls. You can also serve it over pasta, rice, or polenta.

Sausage and Peppers Recipe Variations
- Stovetop Cooking: If you can’t or don’t want to use a grill, this recipe works just as well on the stovetop. Simply cook the sausage in a large skillet until browned, then remove it and set it aside. In the same skillet, cook the peppers and onions as directed, then add the sausage back to the pan and simmer until cooked through. This keeps everything in one pot for minimal cleanup.
- Cheese Please: For an extra-decadent touch, top your sausage and pepper mixture with slices of provolone or mozzarella cheese before the final 15 minutes in the oven. The melted cheese will take it over the top.
- A Little Extra Kick: If you prefer a spicier flavor, use hot Italian sausage instead of sweet, or add a pinch of red pepper flakes to your peppers and onions as they sauté.

Serving Suggestions
This dish is perfect for a crowd or a cozy night in.
- Classic Sandwich: Serve it on a toasted hoagie roll with melted provolone cheese.
- Hearty Main: Serve the mixture on its own, with a side salad.
- Over a Bed of… spoon it over pasta, polenta, or even mashed potatoes.
I love it served with a simple side salad but there are lots of other ways to incorporate it in a menu. Check out some ideas at the bottom of this post!
Storage Information
- Refrigerator: Once cooled, store leftovers in an airtight container in the refrigerator for 3-4 days.
- Freezer: This dish freezes beautifully. Place the cooled mixture in a freezer-safe bag or container and store it for up to 3 months. Thaw in the refrigerator overnight and reheat on the stovetop or in the microwave.
