Preheat your oven to 400°F (200°C) and grease a baking sheet.
Heat the olive oil in a pan and saute the onion until softened. Add the garlic and cook for another 30 seconds.
Stir in the spinach and cook until wilted, adding extra olive oil if the pan gets dry. Season with salt and pepper. Set aside.
If using, chop your chicken breasts or shred leftover chicken.
