I typically don’t gravitate to mixed drinks, but when I do it is a mixed drink with rum!
And in summer, there is nothing better than coconut rum mixed with a refreshing juice to make a delicious cocktail to enjoy on the porch, patio, deck, or poolside.
I love the nutty flavor of coconut rum in a mixed drink recipe, don’t you?
What I love most about this summer cocktail, is how easy it is to make!
It literally takes minutes to prepare and is a total crowd pleaser on a hot summer day.

What Is a Good Mix With Rum?
There are lots of great mixed drinks with rum to enjoy.
It pairs well with lots of different juices and carbonated beverages such as:
- Cranberry Juice
- Orange Juice
- Pineapple Juice
- Grapefruit Juice
- Coconut Water
- Lemon or Lime Juice
- Ginger Ale
- Tonic Water
- Coca Cola
And I’m sure many more!
What Is a Malibu Sunset Drink Recipe?
Malibu sunset cocktails are a layered mixed drink recipe with coconut rum, pineapple juice, and grenadine.
There are also recipes with orange juice mixed in as well, but this recipe is pared down and simple with just 3 ingredients.
When this rum drink is layered, the grenadine sits on the bottom and makes this summer cocktail look like a sunset.

What Is a Layered Drink?
Layering a drink means the different densities in liquors are used to make colored layers.
The layers of this mixed drink with rum form a color gradient similar to that of a sunset.
Layering sounds difficult to do, but it’s actually pretty easy.

How to Make the Best Mixed Drink with Rum: The Malibu Sunset Drink Recipe
What I love most about this recipe, is the few ingredients required to make it!
It’s easy to keep on hand and perfect to serve at a summer dinner party, enjoy on the porch, deck or patio, or enjoy pool, beach or lakeside.
This Malibu sunset drink recipe looks super sweet, but it’s not overly sweetened and has a nice nutty flavor from the coconut rum.
Ingredients Needed to Make a Malibu Sunset Cocktail
So you can really make this two ways. Either with or without orange juice.
I prefer it without orange juice, but if you prefer to make it with, then go for it!
Here’s what you need to make this mixed drink recipe with rum!
- Coconut Rum
- Pineapple Juice
- Maraschino Cherries, Pineapple Chunks, and/or Orange Slices for Garnish
Directions to Make a Malibu Sunset Drink Recipe
This recipe for a Malibu sunset cocktail is too easy to make.
There is no preparation involved.
Rather, it’s pouring, garnish and enjoy!
However, it’s how you pour that makes all the difference in creating the sunset effect.
How to Make the Colors Layer in a Malibu Sunset Cocktail
To start, pour coconut rum and pineapple juice over ice in a glass. I typically use a mason jar to serve, because that’s what we use to make drinks.
Next, slowly pour the grenadine into the drink so it sinks to the bottom to create the sunset effect. Some tip the glass as they pour to help it layer better. I found it works OK both ways.
Then stir once gently to get the layered effect. NOTE: do not over mix or the drink won’t create the color gradients.
Garnish the drink with maraschino cherries, pineapple chunks, and/or orange slices.

Best Mixed Drink Recipe With Rum For Summer
- 2 Parts Coconut Rum
- 2 Parts Pineapple Juice
- 1 Part Grenadine
- Maraschino Cherries (optional)
- Pineapple Chunks (optional)
- Orange Slices (optional)
- Pour coconut rum and pineapple juice over ice in a glass.
- Slowly pour the grenadine into the center of the glass.
- Stir gently once to create the layered effect.
- Garnish with maraschino cherries, pineapple chunks, and/or orange slices
