Every summer when my vegetable garden starts overflowing with ripe tomatoes and fresh basil, this is one of the very first recipes I make.

My grandmother’s fresh tomato bruschetta recipe is simple, classic, and all about letting fresh ingredients shine. Juicy tomatoes, fragrant basil, garlic, olive oil, and toasted bread come together in the best possible way. And seriously? Nothing compares to making it with ingredients picked straight from the garden.

By mid-summer, I’m usually harvesting more tomatoes than I can keep up with, so this recipe becomes a staple for casual lunches, garden-inspired dinners, and easy summer entertaining with family and friends. If you grow your own food too, you know there’s nothing better than finding delicious ways to use up a big harvest before tomato season slips away.

I often make this recipe with homegrown Roma tomatoes, Jersey Boy, Rutgers Ramapo, and heirloom varieties straight from my New Jersey garden. Fresh basil and garlic from the herb garden make the flavor even better.

Ingredients

You don’t need a whole lot of ingredients to make this dish but like I mentioned earlier, the fresher the ingredients, the better the dish.

Directions

  1. Chop fresh tomatoes.
  2. Place in a colander over a bowl, add a few dashes of salt, mix and allow to drain for an hour or two.
  3. Mince 4 cloves of garlic.
  4. Chop fresh basil into thin strips.
  5. Mix tomatoes, basil, garlic, oregano, and extra virgin olive oil in a bowl.
  6. Add salt and pepper to taste.
  7. Slice bread into thin slices.
  8. If toasting in the oven, preheat to 400 degrees – I prefer toasting in a toaster oven.
  9. Place bread on a baking sheet and bake for a few minutes until lightly toasted. (Or toast slices in a toaster oven.)
  10. Top bruschetta onto bread slices and serve.

Use Fresh Garden Tomatoes Whenever Possible

Fresh, vine-ripened tomatoes make all the difference in this recipe. During summer, I make this bruschetta constantly with tomatoes straight from the garden because the flavor is unbeatable.

Roma tomatoes are one of my favorites because they have a rich flavor and lower moisture content, but honestly, almost any fresh tomato works beautifully here. I’ve made this recipe with Jersey Boy, Rutgers Ramapo, heirloom tomatoes, and even cherry tomatoes when that’s what I had ready to harvest.

Drain the Tomatoes Well

Tomatoes release a lot of moisture, so draining them before mixing the bruschetta helps keep the bread from getting soggy. I usually let the chopped tomatoes sit in a colander with a little salt for at least an hour. Sometimes I gently squeeze out a bit of extra juice too, especially with larger slicing tomatoes.

Toasting the Bread Matters

I personally love using a toaster oven because it gives the bread the perfect crisp texture without drying it out too much. You can also toast the bread in the oven, but either way, don’t skip this step. Crispy bread is what keeps the bruschetta from becoming soggy once the tomato mixture is added.

Fresh Basil Makes a Huge Difference

Fresh basil really shines in this recipe, especially when it’s picked straight from the herb garden moments before serving. The combination of basil, garlic, olive oil, and tomatoes is what gives bruschetta that classic fresh summer flavor.

Make It Ahead for Entertaining

You can easily prepare the tomato mixture ahead of time and toast the bread earlier in the day. I usually keep them separate until right before serving so the bread stays crisp. This also works really well for casual summer gatherings because guests can assemble their own bruschetta if they’d like.

  • Keep toasted bread at room temperature in an airtight container for up to 1 day.
  • Assemble just before serving for the best texture.
