Refreshing Cucumber Salad With Dill

I love the ease and fresh flavors of summer meals don’t you?

It’s a great time of year for cooking because ingredients are fresh and available at both the market and in the garden.

Since I grow vegetables, fruits and herbs in my gardens, I love to make meals where I can harvest the produce.

As part of our monthly virtual supper club, my friends and I are celebrating the summer with an amazing dinner party.

Harvesting Ingredients from the Vegetable Garden

To do my part, I’m making a side dish with a harvest of vegetables and herbs from the garden.

Do you have a vegetable garden too?

I love to grow my own food and wish I could do it year round.

But it’s not possible in New Jersey without more land and a greenhouse.

Working with what I have, we recently renovated the vegetable garden because it was totally falling apart in front of my garden shed.

So now I’m growing vegetables in these self-watering raised garden beds.

How to Take Care of Plants While On Vacation

Aren’t they so cool?

They pretty much take care of themselves.

One of my favorite vegetables to grow is cucumbers.

The plants produce in abundance so I’m always looking for ways to use them in recipes.

Refreshing Cucumber Salad with Dill

I love this dish because it goes so well with any main course protein.

This recipe is so light, creamy and refreshing.

Not to mention it is super easy to make too.

But the best part?

You can harvest vegetables and herbs from the garden and use them in this recipe.

And if you don’t have a vegetable garden?

Pick up fresh vegetables and herbs from your local farm stand.

If you don’t have a farm stand or your own garden nearby, purchasing produce from the market will work too.

I’ve made this recipe using sweet onions and red onions.

If you prefer a dish with strong onion flavor or want it to have a little more color, go with the red onions.

While I make it both ways, I prefer the soft onion flavor of the sweet onions.

Refreshing Cucumber Salad With Dill

Refreshing cucumber salad with dill using fresh ingredients from the vegetable garden or farmer's market.

Ingredients
  

  • 2 Large Cucumbers Peeled, Thinly sliced
  • 1 Onion Halved and Sliced Thin, red for strong onion flavor or sweet for softer flavor
  • 1/2 Cup Mayonaise
  • 1/8 Cup Fresh Dill chopped
  • Salt and Pepper to Taste

Instructions
 

  • Peel and slice cucumbers thin. Add to large bowl.

  • Cut onion in half and slice thin. Add to bowl with cucumbers.
  • Add mayo.
  • Chop and dice dill. Add to bowl.
  • Salt and pepper to taste.
  • Put in fridge for at least an hour to let flavors meld.

Notes

This recipe can be made well ahead of time and tastes even better the next day.

  4. Sounds yummy.
    Buuut, cucumbers are full of water, so after slicing, I always drain the cukes in a sieve for at least 1/2 hour so they do not dilute the dressing.
    I really enjoy your poss.

  5. Stacy, I know you are having fun in Haven, but I am making the cucumber salad and thinking of you. I altered it a bit but adding nonfat yogurt to make up 1/2 of the mayo (so 1/4 cup each). It is delicious and better yet is the juice/dressing which I used later on a salad. Very yummy! Thanks for sharing
