Craving a classic? Wait until you try this easy chicken salad with grapes sandwich that can be ready in 15 minutes!

Chicken salad is a classic dish enjoying a well-deserved resurgence. It’s incredibly versatile, easy to prepare, and the perfect canvas for a variety of flavors. Today, we’re focusing on one of my personal favorites: chicken salad with grapes.

This recipe is my go-to for a few reasons. It’s a fantastic way to transform leftover chicken, it’s simple to make, and the grapes add a burst of sweetness that complements the savory flavors perfectly. Whether it’s a light lunch, a brunch centerpiece, or part of an elegant tea party menu, this chicken salad never fails to impress.

Now, I know there’s a bit of a debate out there: grapes vs. celery. While both have their merits, I’m firmly in the grape camp. They bring a juicy, refreshing element that keeps the salad from feeling too dry.

Trust me, once you try this recipe, you’ll understand why it’s been a staple in my kitchen for years.

The Essential Ingredients for Any Chicken Salad Recipe

When making any kind of chicken salad recipe, you need three basic items: the chicken, a crunchy component, and mayonnaise (or some ingredient that brings the dish together).

The Perfect Chicken Salad: It Starts with the Chicken

The beauty of chicken salad is its flexibility. Poached chicken breasts are mild and juicy, roasted chicken brings a richer flavor, and leftover rotisserie chicken is the ultimate convenience hack.

No matter your preference, shredding the chicken is essential for achieving the right texture. Use two forks to gently pull it apart, or a quick pulse in a stand mixer works wonders for bite-sized pieces. (As a bonus, shredded turkey is a fantastic substitute if you’re looking for something different!)

Personally, I often opt for a store-bought rotisserie chicken. It’s less fuss, packed with flavor, and perfectly aligns with my love for easy recipes!

Beyond the Grapes: Ingredients for Flavor and Crunch

While I prefer making my recipe with chicken and grapes, you can create the crunch in other ways too. Celery adds a refreshing crunch, while red onion offers a bit of bite. Toasted nuts, like almonds, pecans, or walnuts, bring richness and texture.

Feeling adventurous? Dried cranberries add a tart pop, chopped apple offers natural sweetness, and fresh herbs like dill or chives bring a touch of springtime freshness. So feel free to play around with the ingredients if you want to change things up.

The Creamy Base: Mayonnaise and Its Substitutes

Mayonnaise is the classic choice for chicken salad, and there’s nothing wrong with that! Whole-fat mayo offers the richest flavor, while low-fat versions lighten things up. Flavored mayos like chipotle or garlic add an interesting twist.

But don’t be afraid to explore healthier options too. Plain Greek yogurt, mixed with a touch of Dijon mustard, creates a tangy and creamy base. Light avocado mayo offers a healthy fat alternative.

While you can make this recipe a few different ways, I lean towards a classic chicken salad with grapes using mayonnaise as the glue that binds it all together.

How to Make Chicken Salad with Grapes Sandwiches

There are minimal ingredients for this recipe, so it is super easy to shop for. It is literally chicken, grapes, and mayonnaise with salt and pepper to taste. And oftentimes, I don’t even bother seasoning it with salt and pepper, because the chicken is flavored and the mayonnaise has enough salt in it so why add more?

The Assembly Process: It’s Easier Than You Think

This chicken salad comes together in a flash! Here’s the simple process:

  1. Gather and prep: Dice your chicken into bite-sized pieces and halve the grapes.
  2. Mix and season: In a large bowl, combine the shredded chicken, grapes, and mayonnaise. Stir gently to avoid turning the chicken into mush. Season with salt and pepper to taste.
  3. Chill and enjoy: Cover the bowl and refrigerate for at least two hours, allowing the flavors to meld. (Feel free to make this ahead of time for ultimate convenience!)

This chicken salad is delightful on its own, but if carbs aren’t a concern, let’s take it to the next level with some delicious bread.

Bread Matters: Elevating Your Chicken Salad

The right bread can transform your chicken salad experience. Classic white bread offers a familiar base, whole wheat brings a touch of heartiness, and sourdough adds a delightful tang. For a truly indulgent touch, croissants are my personal favorite.

If you’re looking for a low-carb option, a lettuce wrap or a bed of greens provides a refreshing alternative. And no matter your bread choice, here’s a pro tip: toasting it adds another dimension of flavor and texture.

When serving this for gatherings, I love using mini croissants for their bite-sized perfection. That buttery, flaky goodness is simply irresistible.

To assemble the sandwiches, slice your croissants (or chosen bread) just before serving and generously spoon the chicken salad onto each half. Enjoy immediately for the best flavor and texture.

Chicken Salad Recipe Variations

Feeling adventurous? Here are a couple of variations to inspire you:

  • Curried Chicken Salad with Grapes and Mango Chutney: Add a teaspoon of curry powder to your dressing for a warm, exotic twist. Top your sandwich with a dollop of mango chutney for a sweet and savory explosion.
  • Light and Healthy Chicken Salad with Apple and Yogurt: Substitute plain Greek yogurt for the mayonnaise and add chopped apple for a touch of sweetness. Chopped celery, walnuts, and a sprinkle of dried cranberries complete this healthy and refreshing option.

Beyond the Sandwich: Serving Ideas

Chicken salad isn’t limited to sandwiches! Serve it on a bed of lettuce for a light and refreshing lunch. Scoop it onto crackers for an easy party appetizer. Feeling fancy? Hollow out a croissant basket and fill it with your chicken salad creation for a delightful centerpiece.

Final Touches and Storage Tips

A few finishing touches can take your chicken salad sandwich over the top. Garnish with a single red grape, a sprinkle of chopped nuts, or a sprig of fresh dill. Once assembled, store your chicken salad in an airtight container in the refrigerator for 3-4 days.

  1. I love grapes in chicken salad. Also add some organic walnuts or pecans and dried cranberries. Great summer meal with your favorite rolls and maybe a slice of melon when in season. Even better the next day.
Enjoy exploring and planting your new gardens. Such a beautiful home.

    1. So true it is so good as a summer meal! The grapes really make the dish in my opinion! Thank you very much Kathy!

  2. Stacy,
I have a rotisserie chicken salad recipe similar to this but mine is more involved! I can’t wait to try yours.

  3. love chicken salad…. I add golden raisins, chopped pecans, celery plus celery seed. And my go to bread is always croissants too! Perfect combination

  4. Thanks for sharing, I love chicken salad! I actually use canned chicken from Sam’s Club, drained and cooked a little with some seasonings in a saucepan then let cool (I know it’s already cooked, but I think it tastes better this way). I use mayo, a little sour cream, chopped pecans, and I like both celery and grapes! (All about the crunch!). Apples are good also. Been meaning to make some now that the weather has warmed up. Definitely need to try it with croissants! It’s great because you can change it up depending on what ingredients you have on hand, as long as you have chicken and mayo😀.

    1. Oh that sounds really good! I love that it is such a forgiving recipe where you can easily change it up. THank you!

  6. I make a version of this too, and I love this! I don’t usually serve it on bread, although now I want a croissant!
