Easy Chicken Salad with Grapes Sandwiches

Looking for ways to use your leftover chicken? Wait until you try this chicken salad with grapes recipe. It tastes great on its own, but it is even better on a sandwich!

Remove the skin, dice the chicken and add to mixing bowl.
Cut grapes in half then add to the chicken.
Add 2/3 cup of mayonnaise and mix well. If it seems dry, add a little more.
Add salt and pepper to taste (optional - I usually skip this step to avoid the additional salt).
Chill for at least 2 hours before serving on its own or making sandwiches.
To make the sandwiches, cut croissants lengthwise.
Spoon chicken salad into the sandwich.
Serve immediately.
