Tortellini
cheese, dried or fresh
parmesan cheese
shaved, garnish
salt and pepper
to taste
Instructions
Heat extra virgin olive oil.
Add garlic and saute until it softens and releases that odor.
If using fresh spinach, add fresh spinach and saute until cooked down.
Add chicken stock and heat to boiling.
If using frozen spinach, add it and cook it directly in the soup.
If adding tomatoes, add it now too.
Season with salt and pepper to taste
Cook for about 7-10 minutes so flavors combine.
Add tortellini and cook according to package directions.
Top with shaved parmesan cheese.
Notes
This recipe can also be prepared ahead of time. Just wait to cook the tortellini until prior to serving.
