Cut sausage into eights
Drizzle extra virgin olive oil in dutch oven over medium high heat
Saute sausage until browned 3-5 minutes
While sausage is browning, chop vegetables.
Remove sausage and set aside.
Saute carrots, onion and celery in sausage juice and extra virgin olive oil. If it's a little dry, add more extra virgin olive oil.
Cook over medium high heat until softened, about 7 minutes.
Toss in spinach and cook down for about 3 minutes.
Add red pepper flakes and garlic and cook for 30 seconds while mixing well.
Next add chicken stock, tomatoes, and water, then bring to boil
Add tortellini and cook according to package directions.
Season with salt and pepper to taste.
Serve immedately. Enjoy!
