Baked Shrimp Scampi

  • 1 lb thawed shrimp, peeled, cleaned and deveined
  • 12 oz salted butter
  • 1/4 cup extra virgin olive oil (EVOO)
  • 2 garlic cloves, minced
  • 2 tbsp fresh chopped parsley
  • salt to taste
  • pepper to taste


  • Pre-heat oven to 375 degrees.
  • Place shrimp, butter, EVOO, garlic and chopped parsley in roasting or casserole dish.
  • Bake for 25-30 minutes or until shrimp are fully cooked.
  • Mix the shrimp up halfway through cooking to make sure it fully cooks.


If you are low carbing, serve as is. Or you can serve over linguini or spaghetti (any pasta you have on hand can work too).
