The Best Spinach Tortellini Soup Recipe

Gather the ingredients.
Finely chop 5 cloves of garlic.
Sautee garlic in 1 tablespoon of extra virgin olive oil over medium high heat.
Next add 1 package of fresh or frozen spinach (fresh is better).
When spinach is cooked down, add 48 oz chicken stock and 2 cups water.
Imediately add 28 oz can of diced tomatoes.
Mix well and bring to a boil.
Then add fresh or frozen tortellini following package directions.
Serve and enjoy!
