These herb-roasted fingerling potatoes are the best! Crispy on the outside, tender on the inside, and bursting with flavor. The perfect side dish.
– Fingerling potatoes
– Cooking Spray
– Extra Virgin Olive Oil
– Shallot
– Garlic
– Chives
– Rosemary
– Sage
– Salt and pepper
Ingredients

Preheat oven to 400 degrees.

Slice fingerling potatoes in half, lengthwise
Add sliced potatoes, olive oil, shallots, garlic, chives, rosemary, sage, salt, and pepper to a bowl, and toss to evenly coat.
Spread potatoes in a single layer onto a greased large baking sheet or baking dish.
Roast for 45 minutes or until crispy on the outside.
Sprinkle with fresh herbs and serve immediately.
