Gather the ingredients.
Rough chop onions and garlic to a roasting pan.
Add peeled tomatoes.
Add chicken, vegetable or beef stock.
Then add some balsamic vinegar.
Roast in preheated 500 degree oven for 45-50 minutes.
Remove from oven and add to stock pot or dutch oven.
Blend until smooth with an immersion blender.
Add cream and heat on medium low to keep warm.
Garnish with parmesan, mozzarella, basil or parsley (your choice!)
Serve with grilled cheese (optional)
